A recent study published by researchers at the National Cancer Institute estimates that the cost of cancer in the U.S. may reach $207 billion by 2020. Is this really necessary?

When Dwayne Ratleff, owner and sole employee of a San Francisco house cleaning service, turned 50, he decided to clean up his own act -- what he eats, that is. He looked for a resource to help him decipher the obscure ingredients listed on processed foods and nutrition labels, but found there was no single easily accessible source. Dwayne set out to research the "alphabet soup" of ingredients on packaged foods and through his own due diligence, ended up creating a searchable database of over 1,500 food products and additives.
Being a resourceful entrepreneur and wanting to share what he learned with the world, Dwayne invested $5K and hired a "techie" to create code to turn his research into an iPhone app. "Don't Eat That" was launched in December 2009 and in short order, Dwayne's "invention" was in the top 1% of all iPhone apps sold. He made back his investment in only one week.
Don't Eat That is available for download at Apple's iTunes store online for $1.99. Af ter the app is downloaded, the data is stored on your iPhone and is accessible at your fingertips as you stroll down your grocery store aisle. No internet connection is needed.

Don't Eat That is a translator that helps consumers decipher the language of food additives, and provides food product facts and definitions arranged in ABC order. Dwayne includes safety standards and research not only from the United States, but also from the European Union (EU) food product identification system. What the US permits as a food additive may be banned in other countries. This can be an extremely helpful tool for international travelers concerned about what they eat while abroad.

Dwayne wants to empower consumers to make the best choice for themselves.
"Err in your favor," Dwayne advises. "If you do not feel comfortable with the science backing the safety of an additive, avoid it, especially if there are alternative sources."
He is especially concerned about mothers and pregnant women who have a greater need to make informed decisions about the ingredients in foods they buy for themselves or their children.
With this in mind, he has also arranged the data in easy to use categories such as: carcinogenic or bad for kids, among others. An example is honey. It is not a well-known fact that honey can cause "infant botulism” and can be fatal for babies under 12 months of age due to a bacteria that can produce a toxin within their bodies.

Recipes and Substitution Tips for Flax Seed
Substituting Fat:
3 Tablespoons ground Omega Golden Flax Seed = 1 Tablespoon Margarine, butter or cooking oil.
Substitute for all or some of the fat depending on the recipe.To substitute for all of the fat with flax seed, increase liquid by 75% as ground flax absorbs liquid. Baked goods brown more quickly.
Substituting Eggs:
1 Tablespoon of ground Omega Golden Flax Seed plus 3 tablespoons water for each egg.
Substitute a 1:3 ratio of ground flax seed and water mixture for each egg in recipes for pancakes, muffins and cookies. Allow to sit for several minutes together before adding to your recipe.
